Leave the top vent open just a little, maybe 1/8 th of the way, to allow smoke and heat to find their way out. The deflector plate also helps to distribute heat evenly across the cooking surface, eliminating hot spots and preventing your food from burning. This means that every bite will be cooked to perfection, no matter where it is placed on the grill.

Lumpwood charcoal, on the other hand, is made by cooking wood in an oxygen-starved environment. Basically, everything other than carbon is cooked off, leaving behind all-natural, pure charcoal. It’s an ancient technique that has changed very little over the centuries. You really don’t want to run out of charcoal part way through a smoke session because re-filling is, quite frankly, a pain in the you-know-what.
