The good news is that you can make the syrup at home in a simple process, and you can keep it in the fridge for a couple of weeks and use it in baking, milkshakes, or your morning coffee. Vanilla was thought of as nothing more than an additive for chocolate until the early 17th Century when Hugh Morgan-a creative apothecary in the employ of Queen Elizabeth I-invented chocolate-free, all-vanilla-flavoured sweetmeats. The real find here is Top Hat East India Tonic. Made with cinchona bark, which contains quinine, tonic syrups can be dangerous to make at home. Buying it from a reputable company is necessary. This tonic is flavorful, accenting the dry profile with grapefruit peel, hops, Darjeeling tea, and chamomile, making it an ideal base for a great gin and tonic. Vanilla extract (or the product usually labeled as “pure vanilla extract”) is made by soaking vanilla beans in alcohol. It is a very strong and concentrated liquid product, usually used in baking.
