I filled my stainless steel fermenter with water and now I am going to try and figure out the best on/off intervals to maintain a constant temperature – i was wondering if you have any suggestions at all?

I use the fermenter belt with a temperature controller so it cycles on and off and keeps my home brew within a few degrees either side of my target temperature. Big swings in temperature are not good for yeast health and may cause unwanted flavour compounds to be produced by the yeast. I've got a master plan to use my old chest freezer (whats not plugged in) in the garage and put a thermostat inside it and I've also put a tropical heat pad around the inside wall to bring the heat to the required temperature!

Placing the fermenter in an area that is fairly stable in temperature (albeit cooler), without large fluctuations in the temperature range. Heating the yeast directly for too long is probably not ideal so you may want to limit the length of time you use a heat pad to just a week to avoid putting too much stress on the mass of yeast.
