About this deal

Early American cookbooks like Miss Corson's Practical American Cookery(1886) and Aunt Babette's Cookbook (1889), recommend simply sealing the cherries in a jar and that's it. Let’s say you came home and have a bunch of cherries you’ll consume in about one week. One question you may ask is, should I store cherries in the refrigerator or on the counter? Use large jars, it makes no sense to take small jars which would only hold a handful of cherries. I usually use jars with a capacity of 800 ml/ 24 fl.oz.

Roll out second dough disk on floured surface to 12-inch round. Using large knife or pastry wheel with fluted edge, cut ten ¾-inch-wide strips from dough round. (You can also just roll into a round and use this to top the pie if you don’t want to make a lattice crust).

Add 1 ½ cups of sugar to a pot with 5 cups of water. Feel free to increase the sugar levels if you desire, or add an additional cup of water if you think the syrup will be too sweet. Heat the water with sugar until all the sugar dissolves. Set aside. Step 3 Sugar – don’t leave out the sugar as it is the preserving agent in this recipe. You can increase or decrease the amount of sugar used. If you cringe at the amount of sugar canned goods require (sometimes I cringe, too), use some homemade apple cider to can your cherries in! The juice can then later be warmed up and used as a hot drink.

In the meantime boil the lids for a few minutes in a small pot full of water. Drain in a colander and handle with care, they are hot. Trim the stem. Most early American recipes call for keeping the stem on the cherry and trimming it short.Place the boozy cherries in a cool, dark spot and wait. The longer they soak, the more infused the fruit becomes — and the more of the color will leach into the spirits, turning the vodka a deep crimson color. Regardless of the container, always ensure the cherries at the bottom are not being crushed by the ones on the top 1. 2. Freeze Fresh Cherries Up To 8 Months.
