Yes, I can always leave out and substitute ingredients and change amounts, and I do for most recipes. The lengthy paragraphs are probably intended as detailed instructions, but end up just overwhelming a nervous home cook. With this book, we promise to bust once and for all the mistaken belief that vegan food has to be expensive to taste great. There are a few standouts though, like there’s a do-able looking recipe for injera (an Ethiopian flatbread) but not a lot of recipes for accompaniments, an intriguing mushroom bulgogi bai filling (bao recipe included) and a chicken sandwich recipe that looks good, but I do wish they explained the process a bit more.My favorite desserts featured were the chocolate traycake, chocolate ganache pots, and the salted caramel sticky toffee pudding. Even though the title says “budget”, that’s not really so much the focus, more like international recipes somewhat seasonally based. I’m also dying to try out the bread-meat doner kebab and the Indian-style Shepherd’s Pie when I have more time on my hands.
