Lemon balm ( Melissa officinalis) is an easy to grow herb that not only attracts bees and pollinators to the garden, but is also a great anti-viral with relaxing properties that are helpful for soothing frayed nerves and calming hyper children. Dried lemon balm properly dried using one of the above techniques should last many months without losing potency or flavor. Infuse dried Lemon Balm in boiling water, strain and serve as a healthy herbal tea or use to make your own DIY bug spray in summer.
